RE: Jean Davy‚ Amber Healing Farm
Over a period of 12 months both Graeme and I have experienced various dishes made by Jean, some being gluten free, dairy free and plenty of others. She uses whole foods with no preservatives and produce mainly grown in her garden and sometimes our own, being organically grown and chemical free. We mention to her what we have in excess and her eyes light up telling us all the delightful dishes she can use the vegetables in. We are both constantly amazed by her ability to create healthy and above all tasty meals out of nettles, seeds and beans, etc. To be able to produce pastry without flour and delicious wholesome meals without meat, that are totally satisfying, is truly a talent.
A friend who has Down syndrome and Autism has had a couple of meals prepared by Jean. He tucked in and didnt hesitate to come back for a second helping. His mother was very impressed. She has referred friends of hers, and her husband will also be consulting Jean. Jean has also preformed a Reiki massage on both Graeme and I. Having never had a Reiki massage before, I didnt know how it could be beneficial without touching me. Was I wrong! I cant describe how wonderful I felt afterwards and have recommended her to friends and family.

On 25 April 2009 I had the pleasure of attending hands on cooking demonstration with Jean Davy at the Amber Healing Farm in North Haven. I had several reasons for wanting to attend the cooking demonstration: I am the director of Training Beyond 2000. A registered training organisation specialising in training for the community services and health industry.I am a registered nurse and nutrition and catering for people with food allergies is extremely important part of the courses we teach. I have a son with Down Syndrome. Whilst he doesnt have any allergies at present people with Down Syndrome are susceptible to Coeliac disease and l feel it is worthwhile giving him a diet that will prevent these symptoms. I also volunteer at Special Olympics where many of the athletes are on a strict Gluten free diet which has a lot of benefits for them. I also suffer from gastric/stomach upsets and would like to change my diet to see if this alleviates my symptoms.
Jean Davy was very professional, she has had years of experience and taught me a lot of about food. Jean was able to answer all our questions and had a sound knowledge of allergies and food. The day was a hands on day where we all participated in the preparation and cooking of the food. We all sat down and ate the food afterwards by the river. It was very peaceful and enjoyable. Prior to attending the course, l had the misconceived idea that if you had to eliminate certain foods from your diet it would be very boring and the food would be very bland. Quite the opposite the recipes Jean demonstrated were delicious and healthy. I am going to book a group of I2 people in to attend another cooking demonstration at the Amber Healing Farm. Thank you Jean I am trying out the recipes on the family.
